Taco Tuesday

I’m not sure whether it was a Tuesday when I made this or not. I do know that it was downright delicious – but then, when is taco salad not delicious?

Taco Salad

It was easy as pie, too (and I can say that pie is easy because I make my own pies).

The only other thing that you need to know prior to reading the ingredients and directions is that Sumo loved it. If you’ve ever read this blog before, you know that his stamp of approval means something.

So without further ado…

Taco Salad
1lb ground beef
1 onion, diced
1 packet taco seasoning
1/4 c. taco sauce (I prefer Ortega)
Romaine lettuce
1/2 c cheddar cheese
handful grape tomatoes, cut in half
1/2 c salsa

1. Preheat your skillet over medium heat. When preheated, add ground beef and onion. Cook, stirring frequently, until beef is browned and onion is translucent.

2. Follow directions on taco seasoning’s packet, and add to ground beef.

3. Meanwhile, spread lettuce on a platter. When beef is done, remove from heat; add taco sauce, and mix well.

4. Spoon beef over lettuce, and top with cheddar cheese, grape tomato halves, and salsa.

Easy does it. And what a wonderful – and healthy – meal!
