It was late evening on August 26th, 2011, a dark and stormy night. Actually, it might have been mid-day and bright outside, I don’t remember. But I do remember ordering my first cast-iron skillet.
I had asked Sumo to get me one for the past two Christmases. Being a typical 30 year old man, he forgot. I got jewelry instead, which led to me forgetting I had even asked for a skillet. *Left hand cast-iron, right hand sapphires and diamonds, we all know who wins that battle.*
Well, on August 26th, I was day-dreaming about that skillet. I thought about all of the delicious food I could make. I mentioned this to Sumo, who, in turn, thought it was the best idea I’d ever had. He even offered to pay for it. He paid no attention to the fact that I was a Southern transplant from Pennsylvania who had never made her own biscuits and who didn’t have the slightest clue what a Dutch Baby was. …his mistake.
Anyway, while waiting for that skillet to arrive, I tried looking up a page that offered everything I wanted to know about skillets. I noticed pages with skillet recipes and pages about seasoning skillets, but I couldn’t find anything that had it all. And no pages seemed to be geared towards a skillet newcomer – you know, appropriately ‘dumbed-down.’
So I decided to start this page as a way to document my experiences, good and bad.
So stick around to see what happens as I learn the ins-and-outs of cooking with cast-iron. Who knows? Maybe you’ll learn a thing or two. I sure hope I do.
